It is celebrated in some regions of Mexico and in America as a celebration by/for Americans of Mexican descent just as Irish Americans (that's all Americans!!) celebrate St Patrick's Day
Chilies in Walnut Sauce (Chiles en Nogada) A Classic among Authentic Mexican Recipes
Ingredients
6 large green chiles 3/4 cup Crema (Mexican sour cream) or sour cream 1/2 teaspoon sugar 1/4 cup evaporated milk 1/2 cup walnuts, finely chopped 1/2 lb ground (minced) pork or beef 3 cloves of garlic 1/4 of an onion, diced 1 tablespoon vegetable oil 1 apple, chopped 2 tablespoons almonds, chopped 1 bunch of parsley, chopped 2 tablespoons raisins, softened in warm water 3 eggs pinch of cinnamon pinch of nutmeg pinch of cumin pinch of salt pinch of pepper 1 pomegranate, seeds separated
Directions
Roast the chiles until blackened and after letting rest for 10 minutes remove the skins and seeds.
Heat the oil over medium heat in a large pan. Add in the beef or pork and brown until nearly done. Add in the onion, apple, garlic, almonds, cinnamon, nutmeg, cumin, pinch of salt and pepper and cook for about 5 minutes.
Beat the egg whites to stiff peaks with a mixer or a whisk. Fold in the egg yolks and a pinch of salt. Dip each chile in the egg mixture and fry until golden brown.
Stuff the chiles with the meat stuffing. Blend or mix the Crema (Mexican sour cream), walnuts and sugar with the evaporated milk. Pour over the chiles and sprinkle with pomegranate seeds.
