Ingredients
250g (9 oz) Butter 190g (6+ oz) caster sugar 4-5 Eggs 250g (9 oz) strong bread flour 20g (1 oz) Baking powder 60ml (2.5 fl oz) Milk 100g (4 oz) chocolate chips 150g (5 oz) drinking chocolate 20 squares of dark chocolate
Directions
In a bowl, mix together the butter and sugar until white and fluffy. Add the eggs, whisk well Add the flour and baking powder to the butter mixture and mix until well-blended. Add in the milk and the drinking chocolate and mix. Add in the chocolate chips. Refrigerate the mixture for 2 hours. Preheat the oven to 200°C/400°F/gas 6. Line muffin trays with paper cases, making 20 muffin cases in all. Place a teaspoon of the muffin mixture in each case. Top each case with a square of chocolate, then add another teaspoon and a half of the muffin mixture on top. Bake the muffins for 20 minutes until cooked through and risen. Remove and serve
