Good for Mom/Mum and good for the kids. Good for the kids cos they love this type/shape of food and good for mother because it is quick, easy, tasty and best yet, healthy, when compared with bought in versions from the fast food take out or supermarket

Ingredients

* 1 pound boneless skinless chicken breasts, cut into narrow strips * 4 tablespoons unsalted butter, melted * 1/2 teaspoon salt * 1-1/4 cups Italian or Japanese seasoned breadcrumbs * Your choice of sauce for dipping

Instructions

1. Preheat oven to 350ºF. 2. Mix breadcrumbs and salt together. 3. Set up a bowl with the melted butter and another right next to it holding the breadcrumbs. Set up a very lightly greased baking pan next to the bowl of breadcrumbs. 4. Dip the chicken strips in butter and then roll breadcrumbs, covering them completely. Place breaded strips in baking pan as you finish them. 5. Bake the chicken fingers for ten minutes, then turn over and cook them another seven minutes until they are brown and juices run clear when poked with a fork. 6. Serve hot with your choice of dipping sauce such as honey, mustard, barbecue sauce, etc.

* 1/2 cup all-purpose flour * 1 teaspoon paprika * 1/2 teaspoon sea salt * 1/2 teaspoon freshly ground black pepper * 1/2 teaspoon chili powder * 2 tablespoons unsalted butter * 1-1/2 pounds boneless skinless chicken breasts cut into 1-inch strips

Instructions

1. Preheat oven to 425ºF. 2. Mix flour, paprika, salt, pepper and chili powder. 3. Melt butter in a large bowl in the microwave. 4. Coat chicken with butter and then toss with flour mixture. 5. Set coated chicken strips in a 9x13 inch baking pan as you finish them. 6. Bake uncovered 15 minutes. 7. Turn chicken strips and bake another 10 to 15 minutes longer, until they are brown and juices run clear when poked with a fork.
