Ingredients
6 potatoes, boiled in skins 60 ml white wine vinegar 2 tsp sugar 1 tsp salt ¼ tsp dry mustard powder ¼ tsp black pepper 450 ml sour cream 60 g (2 oz) green onion, sliced 150 g (5 oz) cucumber, thinly sliced parsley
Directions
Peel and slice the potatoes while still warm Place them in a mixing bowl. Mix the vinegar, sugar, salt, mustard and pepper. Then add the sour cream, onion and cucumber and mix again. Pour the mixture over the potatoes and toss well. Place in a serving dish and sprinkle with the parsley.
