If you get low fat, finely ground, meat the patty will be difficult to work with and will tend to crumble. Also the cooked hamburger will be dryDon't worry about high fat content as most will drain away in the cooking. The more fat the more the burger will shrink while cooking so take that into account when determining the size of each patty. Make each patty 25% bigger than that which you want to end up with. For really tasty burgers, get the 20% fat content ground beef.What should you add to the meat....absolutely nothing
Divide the beef into four sections. Gently form each section into a round “patty” shape. It’s not necessary to tightly pack the beef into shape and you should try to handle the beef as little as possible.
