"How Long Do I Cook Pork Chops?" is a frequent question on Cookery Forums
Pork is a very lean meat and dries out very easily if it is cooked too long. It used to be said that pork had to be cooked till well done but now the view is that you can now cook pork until it is medium or medium rare.

Timings are based on the oven being pre-heated

Get a food probe thermometer. You know your pork chops are done when a meat thermometer reads 165 degrees F, 74C near but not touching the bone. (Red near the bone, leave it alone.)

If you don't have a probe thermometer, cook them on 375F-400F, 190C-200C Gas Mark 6 for from 40 minutes up to an hour. Take them out at that point, cover with foil, and allow to rest for about 5 minutes. They will continue to cook a short while and allow the juices to settle.

How Long Do I Cook Pork Chops using a Cast Iron Grill Pan

Don't over cook them. Buy really thick pork chops, at least 2cm or 1 inch.Get a cast iron grill pan nice and smoking hot on the stove. Snip the rind and fat (not meat) every two cm or so.Get some Extra Virgin Olive oil and rub it into the chops/cutlets. Sprinkle with a little salt and pepper.

Put on the grill pan and cook for about half a minute, change the position of the chops so you get that cross hatch pattern, cook another half a minute and turn over.

Reduce the heat of the grill pan and cook another couple of minutes, repositioning the pork to get the cross hatch thing.

Remove and put on a warm plate and rest for ten minutes in a warm oven.

Suggestion 1
Heat the oven to 200°C/Gas 6. Place the pork chops in a large, lightly oiled baking dish and scatter over the thyme sprigs, rosemary leaves, garlic cloves and salt. Drizzle with a little olive oil and bake for 20 minutes or until the pork chops are cooked through.

Make the sauce in the meantime. Heat the olive oil in a wide pan and add the onion, red pepper, chilli and mushrooms. Stir over a high heat for 3–4 minutes until the vegetables begin to soften.

Tip in the tomatoes. Season with salt and pepper and add the sugar and a splash of water. Simmer for 10–12 minutes until the onions are tender and the tomato sauce has thickened. Taste and adjust the seasoning.

Take the chops out of the oven and leave to rest in a warm place for 5 minutes. Then, pour any pan juices into the sauce and reheat. Ladle a generous amount of sauce over the chops to serve

Suggestion 2
Mix olive oil with lemon juice, then place the pork chops in a roasting tin with chopped onion tucked amongst them. Season with a little salt and freshly milled black pepper, then brush the chops with the oil and lemon juice.

Pop them in a pre heated oven (400F 200C) on a high shelf and cook for 25 minutes exactly. Remove the roasting tin from the oven, pour off any surplus fat from the corner of the tin and pour any preferred sauce all over, giving everything a good coating.Now back it goes into the oven for about another 25 minutes, and you will need to baste it twice during this time.
