Fruit and vegetables are high up on the list

Let's Try a Healthy Sub



Ingredients for the sandwich:

1 loaf French bread
1 cup grated carrots
1 cup thinly sliced cucumber
1/2 cup shredded lettuce
1 tomato, thinly sliced
1 cup grated reduced-fat cheese of your choice

Ingredients for the dressing puree'd in a blender

3 Tbspoons chopped fresh parsley
1 scallion, chopped
2 Tbspoon olive oil
1 Tbspoon wine vinegar
1/2 cup low-fat yogurt
Salt and pepper

Load the bread, sliced in half, with carrots, cucumbers, lettuce, tomato, and cheese. Add the dressing. Cut into four mini subs.
