Potato Salad Recipe

Ingredients

1 tbsp tarragon vinegar
2 tbsp walnut oil
2 tbsp olive oil
1 tsp honey
2 tsp Dijon mustard
sea salt
black pepper
900g (2lb) new potatoes, such as Jersey Royals, washed
1 tbsp fresh tarragon leaves, chopped
1 large shallot, chopped



Directions

Blend together until creamy the vinegar, mustard, oils, honey and salt and pepper
Cook the potatoes in boiling salted water for about 20 minutes until tender. Drain and, when just cool enough to handle, cut into halves or quarters.
Put the potatoes in a mixing bowl with the tarragon, shallots, and toss the amount of dressing you want.
Serve
