Welcome to the Recipes for Muffins web page









Here's a basic muffin recipe to which different flavors can be added.

Ingredients:

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil

In a bowl mix the flour, sugar, baking powder and salt. In another bowl beat the egg, with the milk and oil. Pour into the dry ingredients and stir just until moistened. Do not over stir or the muffins will be chewy. At this point you add in your flavors for example 1/2 cup of chocolate chips stirred in or 3/4 cup of blueberries and 1 tablespoon of lemon juice or add 1/2 cup of raisins and 1 teaspoon of cinnamon or 3 bananas, mashed.Fill greased or paper-lined muffin cups three quarters full and bake at 200°C/400°F/gas 6 for 20 minutes. This makes one dozen muffins.
