If Santa was from Kansas, He'd join the labor queue, Because apart from Christmas deliveries, He's got nothing else to do, But he wouldn't watch daytime TV, And rest his aching feet, He'd find himself an "earner", Strictly cash-no receipt. As he's aleady got the reindeer, He'd probably be found, Serving up cheap deer burgers, Outside the football ground

Ingredients

1.5kg venison meat
500g fatty pork
1 tsp juniper berries
bay leaves
1 tbsp sage leaves
2 tsp white peppercorns
1 tbsp salt
white wine


Directions

Grind 1 tsp juniper berries, 3 bay leaves, 1 tbsp sage leaves, 2 tsp white peppercorns and 1 tbsp salt
Combine 1.5kg venison meat with 500g belly pork and coarsely grind
Add the spice powder to the ground meat, and mix,
Addi white wine to achieve a moist texture.
Heat oil in a skillet (frying pan) make a patty out of the mixture and fry it
About 5 minutes on each side
Form the ground, spiced meat into patties about 2cm thick and grill for 3-4 minutes each side
